The importance of potatoes

Globally, more than one billion people eat potatoes. This makes potatoes the third most important food crop in the world.

Cultivation is especially sustainable because the potato produces more food faster on less land, using less water than any other important food crop. As a result, the importance of the potato is increasing globally.

Staple crop

The potato is a staple food source for many people around the world. With zero percent fat, potatoes contain many important nutrients and are an excellent source of vitamins B1 and B6, and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fibre and pantothenic acid. Potatoes are also extremely low in sodium.

Thanks to their high water content – almost 80% – they are also low in calories. In fact, they contain half the number of calories of an equivalent portion of cooked rice or pasta.

Amazingly versatile

The potato is an amazingly versatile crop and is used in a wide variety of dishes, appearing on the menu several times a week in countries all around the world.

There are numerous ways of preparing potatoes – they can be boiled, baked, roasted, steamed, mashed, fried or cooked on the barbecue. They can be served as an entree or main course, in numerous recipes ranging from soup to fries, from kebabs to oven dishes, and from snacks to mash. The possibilities are endless!

The potato will play an increasingly important role in food security for a growing world population. The need for sustainable potato cultivation is therefore increasing.
